You can substitute squash or pumpkin for the sweet potatoes … and turkey, fish, tofu, or lean beef for the chicken.
1. Place sweet potatoes on a foil-lined baking sheet and chicken in another pan and bake both on 400 degrees F for about 20-25 minutes or until both are cooked through and tender.
2. While sweet potatoes are cooking, pour all ingredients (except chicken and sweet potatoes) into a large pot on top over high heat and stir for about 5 minutes.
3. Reduce heat to low and add sweet potatoes and chicken. Simmer for about 30 minutes, stirring every 5 – 10 minutes.
